Pala "Chiaro di Stelle" Rosé '25 — $26
Region/terroir: Serdiana, Sardinia — clay and sand soils at 150-180m elevation, warm dry Mediterranean summers.
Grape (similar to...): A blend of Monica, Carignano, and Cannonau, three native Sardinian reds rarely seen outside the island; think of it as Sardinia's answer to a Provençal rosé blend.
The harvest decision → the effect: The winemaker picked these red grapes specifically for rosé, meaning a much earlier harvest date than if they were destined to become a red wine, preserving acidity and delicate color a fully ripe pick would have sacrificed. Just 12 hours of skin maceration keeps it pink without pulling in tannin.
Wine personality: The friend who shows up early to everything and somehow still seems relaxed, bright, breezy, a little sun-kissed.
Classic pairing: Fried calamari, the wine's acidity and salinity cut through the fry oil while echoing the sea itself.
Cooper Mountain Gamay Noir '23 — $26
Region/terroir: Willamette Valley, Oregon (Cooper Mountain, an extinct volcano) — volcanic soil, cool Pacific-influenced climate.
Grape (similar to...): 100% Gamay, planted here only in 2010, similar to Beaujolais but grown cooler and wetter, pushing more savory depth.
The harvest decision → the effect: Farmed organically and biodynamically, the winemaker chose native-yeast fermentation, letting the season's own microflora shape the wine rather than a lab-selected strain. Aging in older oak (no new wood) was a deliberate choice to let fruit and place speak instead of vanilla and spice.
Wine personality: The low-key friend who lets the room do the talking, quietly confident, never trying too hard to impress.
Classic pairing: Roast chicken with herbs, Gamay's bright acid and light tannin are built for poultry, and its savory undertone matches roasted herbs.
Bodega Calle "Dharma" Reserva, Malbec/Cabernet Franc — $26
Region/terroir: San Carlos/Luján de Cuyo, Mendoza, Argentina — high-altitude, organically farmed single vineyard.
Grape (similar to...): 60% Malbec, 40% Cabernet Franc, Malbec brings Mendoza's generous warmth, Cabernet Franc (more at home in the Loire) adds herbal edge and backbone.
The harvest decision → the effect: Grapes are delivered to concrete tanks by gravity rather than pumps, protecting fragile fruit from bruising. Native yeast fermentation follows the same instinct: trust the vineyard. A full year in gently used French oak seasons the wine rather than dominating it.
Wine personality: Warm and generous but grounded, the host who makes sure everyone's glass is full before their own.
Classic pairing: Grilled steak, the quintessential Argentine pairing; the wine's structure and dark fruit are built for the char and richness of open-flame beef.
Château La Caussade Bordeaux Blanc '25 — $26 (6-bottle club exclusive)
Region/terroir: Sainte-Croix-du-Mont, Bordeaux, right bank — clay-limestone, fossil-rich soils.
Grape (similar to...): Sauvignon Blanc with a touch of Sémillon, a lighter, drier sibling of the same estate's famous sweet wines (Sémillon is the backbone of Sauternes).
The harvest decision → the effect: picked earlier and made dry (instead of leaving to hang and become botrytized wine), a completely different life path decided at the moment of harvest, preserving citrus brightness over concentrated sweetness.
Wine personality: The sibling who chose a different path than the family business, same roots, lighter step, still plenty sharp.
Classic pairing: Oysters or a light seafood starter, the wine's acidity and minerality are built for briny, delicate shellfish.
Dila-O Rkatsiteli-Mtsvane '24 — $26 (6-bottle club exclusive)
Region/terroir: Kakheti, Georgia — the birthplace of wine itself, alluvial and loamy clay soils.
Grape (similar to...): A 50/50 blend of Rkatsiteli and Mtsvane, Georgia's two signature native whites
The harvest decision → the effect: The winemakers chose only one month of skin contact in buried qvevri, a deliberately restrained maceration in a tradition capable of going much longer, keeping tannin gentle and fruit fresh rather than pushing into something heavier.
Wine personality: The old soul who's traveled everywhere but never lost their warmth, ancient, grounded, easy to sit with.
Classic pairing: Grilled or roasted vegetables, the wine's gentle tannin and honeyed fruit are built for smoky, earthy vegetable dishes, a very Georgian pairing philosophy.
Vasse Felix "Filius" Cabernet Sauvignon — $26 (6-bottle club exclusive)
Region/terroir: Margaret River, Western Australia — coastal maritime climate surrounded by oceans, gravel soils and cooling sea breezes that yield fine-grained tannins.
Grape (similar to...): 93% Cabernet Sauvignon, 5.5% Malbec, 1.5% Petit Verdot; a classic Bordeaux-style blend crafted in a vibrant, fresher Australian expression.
The harvest decision → the effect: Sourced from younger estate vines and fermented entirely with wild yeasts in open-top fermenters; early pressing and delicate handling accentuate fragrant fruit aromatics and smooth out structure without heavy oak extraction.
Wine personality: The precocious younger sibling, sharing high-end pedigree with the flagship bottling, yet instantly outgoing, playful, and ready to enjoy tonight.
Classic pairing: Roasted lamb or grilled beef steak, where the wine's vibrant dark fruit, savory nuance, and fine tannic edge easily balance rich meats.
